Ingredients
- Basmati rice - 1 cup
- Chicken thighs, boneless and skinless - 250 grams
- Onion, thinly sliced - 1 medium
- Garlic, minced - 2 cloves
- Ginger, grated - 1 tablespoon
- Tomato, chopped - 1 medium
- Plain yogurt - 100 grams
- Biryani spice mix - 1 tablespoon
- Cilantro, chopped - 2 tablespoons
- Mint leaves, chopped - 2 tablespoons
- Green chili, slit - 1
- Salt - to taste
- Vegetable oil - 2 tablespoons
- Water - 2 cups
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a bowl, combine the chicken thighs with yogurt, biryani spice mix, salt, garlic, ginger, and lemon juice. Marinate for at least 15 minutes.
- Heat the vegetable oil in a large pot over medium heat. Add the sliced onions and sauté until golden brown.
- Add the marinated chicken to the pot and cook until it starts to brown, about 5-7 minutes.
- Stir in the chopped tomato and green chili, cooking for another 3-4 minutes until the tomato softens.
- Drain the soaked rice and add it to the pot, gently mixing it with the chicken and spices.
- Pour in the water, bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes until the rice is tender and has absorbed the liquid.
- Remove the pot from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the biryani gently with a fork and mix in chopped cilantro and mint leaves.
- Serve warm in bowls, garnished with additional herbs if desired.
