- Garlic, minced - 2 cloves
- Ginger, minced - 1 tablespoon
- Tomato, chopped - 1 medium
- Yogurt - 1/4 cup
- Biryani spice mix - 2 teaspoons
- Cilantro, chopped - 2 tablespoons
- Mint leaves, chopped - 2 tablespoons
- Ghee or vegetable oil - 3 tablespoons
- Salt - to taste
- Water - 2 cups
- Lemon juice - 1 tablespoon
- Green chili, slit - 1 (optional)
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
- In a large bowl, combine the chicken, yogurt, biryani spice mix, lemon juice, and salt. Marinate for at least 20 minutes.
- Heat ghee or oil in a heavy-bottomed pot over medium heat. Add the sliced onions and sauté until golden brown.
- Add the minced garlic and ginger to the pot and cook for another 2 minutes until fragrant.
- Stir in the chopped tomato and cook until it softens, about 3-4 minutes.
- Add the marinated chicken to the pot and cook until the chicken is browned on all sides, about 5-7 minutes.
- Add the drained basmati rice and water to the pot. Stir gently to combine, ensuring the rice is evenly distributed.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Cook for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 10 minutes to allow the flavors to meld.
- Fluff the biryani with a fork and garnish with chopped cilantro and mint leaves. Serve hot.
