Ingredients

  • Basmati rice - 1 cup
  • Chicken thighs, boneless and skinless - 300 grams
  • Onion, thinly sliced - 1 medium
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 tablespoon
  • Tomato, chopped - 1 medium
  • Yogurt - 1/4 cup
  • Biryani spice mix - 2 teaspoons
  • Cilantro, chopped - 2 tablespoons
  • Mint leaves, chopped - 2 tablespoons
  • Ghee or vegetable oil - 3 tablespoons
  • Salt - to taste
  • Water - 2 cups
  • Lemon juice - 1 tablespoon
  • Green chili, slit - 1 (optional)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. In a large bowl, combine the chicken, yogurt, biryani spice mix, lemon juice, and salt. Marinate for at least 20 minutes.
  3. Heat ghee or oil in a heavy-bottomed pot over medium heat. Add the sliced onions and sauté until golden brown.
  4. Add the minced garlic and ginger to the pot and cook for another 2 minutes until fragrant.
  5. Stir in the chopped tomato and cook until it softens, about 3-4 minutes.
  6. Add the marinated chicken to the pot and cook until the chicken is browned on all sides, about 5-7 minutes.
  7. Add the drained basmati rice and water to the pot. Stir gently to combine, ensuring the rice is evenly distributed.
  8. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Cook for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  9. Remove from heat and let it sit, covered, for an additional 10 minutes to allow the flavors to meld.
  10. Fluff the biryani with a fork and garnish with chopped cilantro and mint leaves. Serve hot.
