  • Chicken breast - 200 grams, diced
  • Wild rice - 50 grams
  • Chicken broth - 500 ml
  • Celery - 1 stalk, diced
  • Carrot - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat olive oil over medium heat. Add diced onion, celery, and carrot. Sauté for about 5 minutes until softened.
  2. Add minced garlic to the pot and cook for another minute until fragrant.
  3. Stir in the diced chicken breast and cook until lightly browned, about 5-7 minutes.
  4. Add the wild rice, chicken broth, thyme, salt, and black pepper. Bring to a boil.
