Ingredients

  • Chicken breast - 300 grams, cubed
  • Bell pepper (red or yellow) - 1, cut into chunks
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, cut into wedges
  • Cherry tomatoes - 100 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a large bowl, combine the olive oil, lemon juice, garlic powder, paprika, salt, and black pepper to create a marinade.
  2. Add the cubed chicken to the marinade and toss well to coat. Let it marinate for at least 10 minutes.
  3. While the chicken is marinating, prepare the vegetables by cutting them into suitable sizes for skewering.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Thread the marinated chicken and vegetables alternately onto the skewers, ensuring an even distribution.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from the grill and let them rest for a couple of minutes before serving.
