Ingredients

  • Arborio rice - 1 cup
  • Chicken breast, diced - 200 grams
  • Chicken broth - 3 cups
  • Onion, finely chopped - 1 small
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Zucchini, diced - 1 small
  • Bell pepper, diced - 1/2 medium
  • Frozen peas - 1/2 cup
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese, grated - 1/4 cup
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a saucepan, bring the chicken broth to a simmer and keep it warm over low heat.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
  3. Add the diced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes. Season with salt and black pepper.
  4. Stir in the diced carrot, zucchini, and bell pepper, cooking for an additional 3-4 minutes until the vegetables begin to soften.
  5. Add the arborio rice to the skillet, stirring to coat the rice with the oil and mix with the other ingredients. Cook for 1-2 minutes until the rice is slightly translucent.
  6. Begin adding the warm chicken broth to the rice mixture, one ladle at a time, stirring frequently until the liquid is mostly absorbed before adding the next ladle. Continue this process until the rice is creamy and cooked al dente, about 18-20 minutes.
  7. In the last few minutes of cooking, stir in the frozen peas and cook until heated through.
  8. Remove the skillet from heat and stir in the grated Parmesan cheese and chopped parsley. Adjust seasoning as needed.
  9. Serve hot, garnished with additional parsley and Parmesan if desired.
