Steps
- In a saucepan, bring the chicken broth to a simmer and keep it warm over low heat.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
- Add the diced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes. Season with salt and black pepper.
- Stir in the diced carrot, zucchini, and bell pepper, cooking for an additional 3-4 minutes until the vegetables begin to soften.
- Add the arborio rice to the skillet, stirring to coat the rice with the oil and mix with the other ingredients. Cook for 1-2 minutes until the rice is slightly translucent.
- Begin adding the warm chicken broth to the rice mixture, one ladle at a time, stirring frequently until the liquid is mostly absorbed before adding the next ladle. Continue this process until the rice is creamy and cooked al dente, about 18-20 minutes.
- In the last few minutes of cooking, stir in the frozen peas and cook until heated through.
- Remove the skillet from heat and stir in the grated Parmesan cheese and chopped parsley. Adjust seasoning as needed.
- Serve hot, garnished with additional parsley and Parmesan if desired.
