- Bell pepper (diced) - 100g
- Carrot (grated) - 50g
- Onion (chopped) - 50g

- All-purpose flour - 1 tablespoon
- Chicken broth (low-sodium) - 250ml
- Milk (dairy or non-dairy) - 100ml

Steps
- Preheat your oven to 180°C (350°F).
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add chopped onion and garlic. Sauté for 2-3 minutes until softened.
- Add the sliced zucchini, diced bell pepper, and grated carrot to the skillet. Cook for another 5 minutes until the vegetables are tender.
- Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute, then gradually add the chicken broth and milk, stirring constantly until the mixture thickens, about 3-5 minutes.
- Season the sauce with salt, black pepper, and dried oregano. Stir in the cooked chicken and pasta until well combined.
- Transfer the mixture to a baking dish and sprinkle the shredded cheese evenly on top.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
