  • Green bell pepper - 1 medium
  • Onion - 1 medium
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat tortillas - 2
  • Fresh cilantro - 2 tablespoons
  • Avocado - 1 small

Steps

  1. Slice the chicken breast into thin strips and place in a bowl.
  2. In a separate small bowl, mix the olive oil, lime juice, garlic powder, cumin, paprika, salt, and black pepper to create a marinade.
  3. Pour the marinade over the chicken strips, ensuring they are well coated. Let it marinate for at least 10 minutes.
  4. While the chicken is marinating, slice the red and green bell peppers and onion into thin strips.
  5. Heat a large skillet over medium-high heat and add a splash of olive oil.
  6. Once the skillet is hot, add the marinated chicken and cook for about 5-7 minutes until no longer pink, stirring occasionally.
  7. Add the sliced bell peppers and onions to the skillet with the chicken, cooking for an additional 5-7 minutes until the vegetables are tender but still crisp.
  8. Warm the whole wheat tortillas in a separate pan or microwave for about 30 seconds.
  9. To serve, place a generous portion of the chicken and vegetable mixture on each tortilla, top with diced avocado and fresh cilantro.
  10. Fold the tortillas and enjoy your healthy chicken and vegetable fajitas!
