- Curry powder - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - for garnish
- Rice - 1 cup (uncooked)
- Water - 2 cups (for rice)
Steps
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion, garlic, and ginger, and sauté for about 3-4 minutes until the onion is translucent.
- Stir in the diced chicken breast and cook until browned on all sides, about 5-7 minutes.
- Add the curry powder, salt, and black pepper, mixing well to coat the chicken.
- Incorporate the bell pepper, carrot, and zucchini, cooking for another 5 minutes until the vegetables begin to soften.
- Pour in the coconut milk, stirring to combine, and let the mixture simmer for 10-15 minutes until the chicken is cooked through and the sauce thickens slightly.
- While the curry simmers, rinse the uncooked rice under cold water until the water runs clear, then combine with 2 cups of water in a saucepan.
- Bring the water to a boil, then reduce to low heat, cover, and cook for 15-20 minutes until the rice is tender and the water is absorbed.
- Serve the curry over the rice, garnished with fresh cilantro.
