- Carrot - 1 medium, diced
- Red bell pepper - 1, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced

- Greek yogurt - 100 grams
- Low-sodium chicken broth - 100 ml
- Whole wheat breadcrumbs - 30 grams
- Dried thyme - 1 teaspoon
- Black pepper - to taste
- Salt - to taste
- Parmesan cheese - 20 grams, grated
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 3 minutes.
- Add the diced chicken to the skillet and cook until lightly browned, about 5-7 minutes.
- Stir in the broccoli, carrot, and red bell pepper, and cook for another 5 minutes until vegetables are slightly tender.
- In a bowl, mix Greek yogurt, chicken broth, dried thyme, salt, and black pepper until well combined.
- Pour the yogurt mixture over the chicken and vegetable mixture in the skillet, stirring to combine.
