- gluten-free jumbo pasta shells - 8 shells
- cooked chicken breast, shredded - 150 grams
- fresh spinach, chopped - 100 grams
- ricotta cheese - 150 grams
- mozzarella cheese, shredded - 100 grams
- Parmesan cheese, grated - 30 grams
- garlic, minced - 2 cloves
- olive oil - 1 tablespoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- tomato sauce - 200 grams
- dried oregano - 1/2 teaspoon
- fresh basil, chopped (for garnish) - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large pot of boiling water, cook the gluten-free jumbo pasta shells according to package instructions until al dente, then drain and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
- In a bowl, mix together shredded chicken, cooked spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, salt, black pepper, and dried oregano until well combined.
- Stuff each cooked shell with the chicken and spinach mixture and place them in a baking dish.
- Spread tomato sauce evenly over the stuffed shells and sprinkle the remaining mozzarella cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
