- Bell peppers - 2 large
- Cooked chicken breast, shredded - 200 grams
- Fresh spinach, chopped - 100 grams
- Cream cheese - 100 grams
- Garlic, minced - 2 cloves
- Onion, finely chopped - 50 grams
- Olive oil - 1 tablespoon
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Shredded mozzarella cheese - 50 grams
Steps
- Preheat your oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant and translucent, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
- In a mixing bowl, combine the shredded chicken, cream cheese, sautéed spinach, Italian seasoning, salt, and black pepper. Mix until well combined.
- Stuff the bell peppers with the chicken and spinach mixture, pressing down gently to pack them in.
- Place the stuffed peppers upright in a baking dish. Sprinkle shredded mozzarella cheese on top of each pepper.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Remove from oven, let cool for a few minutes, and serve warm.
