Ingredients

  • Bell peppers - 2 large
  • Cooked chicken breast, shredded - 200 grams
  • Fresh spinach, chopped - 100 grams
  • Cream cheese - 100 grams
  • Garlic, minced - 2 cloves
  • Onion, finely chopped - 50 grams
  • Olive oil - 1 tablespoon
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Shredded mozzarella cheese - 50 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant and translucent, about 3-4 minutes.
  4. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
  5. In a mixing bowl, combine the shredded chicken, cream cheese, sautéed spinach, Italian seasoning, salt, and black pepper. Mix until well combined.
  6. Stuff the bell peppers with the chicken and spinach mixture, pressing down gently to pack them in.
  7. Place the stuffed peppers upright in a baking dish. Sprinkle shredded mozzarella cheese on top of each pepper.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  10. Remove from oven, let cool for a few minutes, and serve warm.
