Ingredients

  • Pasta (fettuccine or penne) - 150 grams
  • Chicken breast, boneless and skinless - 200 grams
  • Fresh spinach - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Heavy cream - 120 milliliters
  • Parmesan cheese, grated - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg (optional) - a pinch

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Add the chicken breast to the skillet and season with salt and black pepper. Cook for about 5-6 minutes on each side until the chicken is cooked through and no longer pink in the center.
  5. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  6. In the same skillet, add the fresh spinach and sauté for 2-3 minutes until wilted.
  7. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth.
  8. Season the sauce with additional salt, black pepper, and a pinch of nutmeg if desired.
  9. Add the cooked pasta and sliced chicken to the skillet, tossing everything together until well coated with the Alfredo sauce.
  10. Serve immediately, garnished with extra Parmesan cheese if desired.
