- Pasta (fettuccine or penne) - 150 grams
- Chicken breast, boneless and skinless - 200 grams
- Fresh spinach - 100 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Heavy cream - 120 milliliters
- Parmesan cheese, grated - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg (optional) - a pinch
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Add the chicken breast to the skillet and season with salt and black pepper. Cook for about 5-6 minutes on each side until the chicken is cooked through and no longer pink in the center.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
- In the same skillet, add the fresh spinach and sauté for 2-3 minutes until wilted.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth.
- Season the sauce with additional salt, black pepper, and a pinch of nutmeg if desired.
- Add the cooked pasta and sliced chicken to the skillet, tossing everything together until well coated with the Alfredo sauce.
- Serve immediately, garnished with extra Parmesan cheese if desired.
