- Chicken breasts - 2 pieces (about 300g each)
- Fresh spinach - 200g
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Parmesan cheese - 30g, grated (optional for garnish)
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, black pepper, and paprika on both sides.
- Add the seasoned chicken to the skillet and cook for about 7-8 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 75°C).
- Remove the chicken from the skillet and let it rest on a plate.
- In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant.
- Add the fresh spinach to the skillet and sauté until wilted, about 3-4 minutes.
- Stir in the lemon juice and season with additional salt and pepper to taste.
- Slice the rested chicken breasts and serve over the sautéed spinach. Garnish with grated Parmesan cheese if desired.
