Ingredients

  • Chicken breasts - 2 pieces (about 300g each)
  • Fresh spinach - 200g
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Parmesan cheese - 30g, grated (optional for garnish)

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, black pepper, and paprika on both sides.
  3. Add the seasoned chicken to the skillet and cook for about 7-8 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 75°C).
  4. Remove the chicken from the skillet and let it rest on a plate.
  5. In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant.
  6. Add the fresh spinach to the skillet and sauté until wilted, about 3-4 minutes.
  7. Stir in the lemon juice and season with additional salt and pepper to taste.
  8. Slice the rested chicken breasts and serve over the sautéed spinach. Garnish with grated Parmesan cheese if desired.
