Ingredients

  • Chicken thighs - 250 grams, boneless and skinless, cut into bite-sized pieces
  • Andouille sausage - 100 grams, sliced
  • Olive oil - 2 tablespoons
  • Bell pepper - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Chicken broth - 500 ml, low sodium
  • Diced tomatoes - 200 grams, canned
  • Okra - 100 grams, sliced (fresh or frozen)
  • Cajun seasoning - 1 tablespoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same pot, add the diced onion, bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the chicken pieces and cook until they are browned on all sides, about 5 minutes.
  5. Add the browned sausage back to the pot, followed by the Cajun seasoning, bay leaf, diced tomatoes, and chicken broth. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for 20 minutes, stirring occasionally.
  7. Add the sliced okra and simmer for an additional 5-10 minutes until the okra is tender.
  8. Season with salt and black pepper to taste. Remove the bay leaf before serving.
  9. Serve hot, garnished with fresh parsley.
