- Carrot, diced - 1 medium (about 70 grams)
- Garlic, minced - 2 cloves
- Olive oil - 2 tablespoons (30 ml)
- Fresh parsley, chopped - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Bay leaf - 1
Steps
- Heat olive oil in a medium pot over medium heat. Add chopped onion and diced carrot, sautéing until softened, about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Season the chicken thighs with salt, pepper, cumin, and paprika. Add them to the pot, browning for about 5-7 minutes on each side.
- Once the chicken is browned, remove it from the pot and set aside.
- Add the rice to the pot, stirring to coat it with the oil and vegetables. Toast the rice for about 2 minutes.
- Pour in the chicken broth, add the bay leaf, and bring to a boil.
- Return the chicken to the pot, reduce the heat to low, cover, and simmer for 20 minutes, until the rice is tender and has absorbed the liquid.
- Remove the bay leaf, fluff the rice with a fork, and stir in chopped parsley before serving.
