  • Onion, chopped - 1 medium (about 150 grams)
  • Carrot, diced - 1 medium (about 70 grams)
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons (30 ml)
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Bay leaf - 1

Steps

  1. Heat olive oil in a medium pot over medium heat. Add chopped onion and diced carrot, sautéing until softened, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Season the chicken thighs with salt, pepper, cumin, and paprika. Add them to the pot, browning for about 5-7 minutes on each side.
  4. Once the chicken is browned, remove it from the pot and set aside.
  5. Add the rice to the pot, stirring to coat it with the oil and vegetables. Toast the rice for about 2 minutes.
  6. Pour in the chicken broth, add the bay leaf, and bring to a boil.
  7. Return the chicken to the pot, reduce the heat to low, cover, and simmer for 20 minutes, until the rice is tender and has absorbed the liquid.
  8. Remove the bay leaf, fluff the rice with a fork, and stir in chopped parsley before serving.
