Ingredients

  • Chicken breast - 300 grams, diced
  • Mushrooms (button or cremini) - 200 grams, sliced
  • Chicken broth - 500 ml
  • Heavy cream - 100 ml
  • Butter - 30 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon, or to taste
  • Black pepper - 1/4 teaspoon, or to taste
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and sliced mushrooms to the pot. Cook until the mushrooms are softened, about 5 minutes.
  3. Increase the heat to medium-high and add the diced chicken breast. Cook until the chicken is no longer pink on the outside, about 5-7 minutes.
  4. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 10 minutes.
  5. Stir in the heavy cream, dried thyme, salt, and black pepper. Allow it to simmer for an additional 5 minutes, stirring occasionally.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
