- Chicken breast - 300 grams, diced
- Mushrooms (button or cremini) - 200 grams, sliced
- Chicken broth - 500 ml
- Heavy cream - 100 ml
- Butter - 30 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon, or to taste
- Black pepper - 1/4 teaspoon, or to taste
- Parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the pot. Cook until the mushrooms are softened, about 5 minutes.
- Increase the heat to medium-high and add the diced chicken breast. Cook until the chicken is no longer pink on the outside, about 5-7 minutes.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 10 minutes.
- Stir in the heavy cream, dried thyme, salt, and black pepper. Allow it to simmer for an additional 5 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
