Ingredients

  • Arborio rice - 1 cup
  • Chicken breast, diced - 200 grams
  • Mushrooms, sliced - 150 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Chicken broth - 3 cups
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese, grated - 1/4 cup
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a saucepan, heat the chicken broth over low heat to keep it warm.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  4. Add the sliced mushrooms to the skillet and cook until they are tender and browned, about 5 minutes.
  5. Stir in the Arborio rice, allowing it to toast for about 1-2 minutes, stirring frequently.
  6. Pour in 1 cup of warm chicken broth, stirring constantly until the liquid is mostly absorbed.
  7. Continue adding the broth, one cup at a time, stirring frequently and allowing each addition to be absorbed before adding the next. This should take about 15-20 minutes.
  8. Once the rice is creamy and al dente, stir in the cooked chicken and grated Parmesan cheese. Mix well until the cheese is melted and incorporated.
  9. Remove from heat and stir in chopped parsley. Adjust seasoning with additional salt and pepper if needed.
  10. Serve hot, garnished with extra parsley and Parmesan if desired.
