- Arborio rice - 1 cup
- Chicken breast, diced - 200 grams
- Mushrooms, sliced - 150 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Chicken broth - 3 cups
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese, grated - 1/4 cup
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a saucepan, heat the chicken broth over low heat to keep it warm.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the sliced mushrooms to the skillet and cook until they are tender and browned, about 5 minutes.
- Stir in the Arborio rice, allowing it to toast for about 1-2 minutes, stirring frequently.
- Pour in 1 cup of warm chicken broth, stirring constantly until the liquid is mostly absorbed.
- Continue adding the broth, one cup at a time, stirring frequently and allowing each addition to be absorbed before adding the next. This should take about 15-20 minutes.
- Once the rice is creamy and al dente, stir in the cooked chicken and grated Parmesan cheese. Mix well until the cheese is melted and incorporated.
- Remove from heat and stir in chopped parsley. Adjust seasoning with additional salt and pepper if needed.
- Serve hot, garnished with extra parsley and Parmesan if desired.
