- Chicken thighs - 300 grams
- Green or brown lentils - 150 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Chicken broth - 500 ml
- Olive oil - 2 tablespoons
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the lentils under cold water and set aside.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic, thyme, salt, and black pepper to the vegetables, and cook for an additional 1-2 minutes until fragrant.
- In the same saucepan, add the rinsed lentils, chicken broth, and bay leaf. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the lentils are tender.
- While the lentils are cooking, season the chicken thighs with salt and pepper. In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the chicken thighs and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.
- Once the lentils are cooked, remove from heat and discard the bay leaf. Slice the cooked chicken thighs.
- Serve the lentils in bowls, topped with sliced chicken and garnished with fresh parsley.
