Ingredients

  • Chicken thighs - 300 grams
  • Green or brown lentils - 150 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  3. Add the minced garlic, thyme, salt, and black pepper to the vegetables, and cook for an additional 1-2 minutes until fragrant.
  4. In the same saucepan, add the rinsed lentils, chicken broth, and bay leaf. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the lentils are tender.
  5. While the lentils are cooking, season the chicken thighs with salt and pepper. In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the chicken thighs and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.
  6. Once the lentils are cooked, remove from heat and discard the bay leaf. Slice the cooked chicken thighs.
  7. Serve the lentils in bowls, topped with sliced chicken and garnished with fresh parsley.
