Ingredients

  • Chicken breast - 300 grams
  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Begin by washing the cauliflower and cutting it into florets. Place the florets in a food processor and pulse until they resemble rice grains. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  3. Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
  4. Cut the chicken breast into bite-sized pieces and add it to the skillet. Season with cumin, paprika, salt, and black pepper. Cook for about 7-10 minutes, or until the chicken is cooked through and no longer pink.
  5. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the cauliflower rice and sauté for 5-7 minutes, stirring occasionally, until tender.
  6. Combine the cooked chicken mixture with the cauliflower rice, stirring well to combine. Cook for an additional 2 minutes to heat through.
  7. Garnish with fresh parsley before serving.
