Ingredients

  • Chicken thighs - 300 grams
  • Cauliflower - 200 grams, cut into florets
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the cauliflower florets with 1 tablespoon of olive oil, minced garlic, paprika, cumin, salt, and black pepper. Toss until the cauliflower is evenly coated.
  3. Spread the cauliflower on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and golden brown.
  4. Meanwhile, season the chicken thighs with salt, pepper, and the remaining tablespoon of olive oil.
  5. In a skillet over medium heat, cook the chicken thighs for 5-7 minutes per side until golden brown and cooked through, reaching an internal temperature of 75°C (165°F).
  6. Once both the chicken and cauliflower are cooked, plate them together and garnish with fresh parsley.
