- Chicken thighs - 300 grams
- Cauliflower - 200 grams, cut into florets
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the cauliflower florets with 1 tablespoon of olive oil, minced garlic, paprika, cumin, salt, and black pepper. Toss until the cauliflower is evenly coated.
- Spread the cauliflower on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and golden brown.
- Meanwhile, season the chicken thighs with salt, pepper, and the remaining tablespoon of olive oil.
- In a skillet over medium heat, cook the chicken thighs for 5-7 minutes per side until golden brown and cooked through, reaching an internal temperature of 75°C (165°F).
- Once both the chicken and cauliflower are cooked, plate them together and garnish with fresh parsley.
