Ingredients

  • Chicken breast - 300 grams, diced
  • Broccoli florets - 200 grams
  • Fettuccine pasta - 150 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Heavy cream - 200 ml
  • Parmesan cheese - 50 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta water and then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook for 5-7 minutes until browned and cooked through. Season with salt and pepper.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, then add the broccoli florets. Cook for another 3-4 minutes until the broccoli is tender.
  4. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, nutmeg, and reserved pasta water to create a creamy sauce. Adjust seasoning if necessary.
  5. Add the cooked fettuccine to the skillet and toss to combine, ensuring the pasta is well coated with the Alfredo sauce.
  6. Serve immediately, garnished with chopped parsley.
