Ingredients

  • Cucumber - 1/2 medium
  • Red onion - 1/4 medium
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Cook the chicken breast by boiling it in water for about 15 minutes or until fully cooked, then let it cool and shred it into bite-sized pieces.
