- Zucchini - 2 medium
- Chicken breast - 250 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Heavy cream - 120 ml
- Parmesan cheese - 50 grams, grated
- Salt - to taste
- Black pepper - to taste
- Italian seasoning - 1 teaspoon
- Fresh parsley - for garnish
Steps
- Spiralize the zucchini using a spiralizer to create zoodles. Set aside.
- In a skillet, heat the olive oil over medium heat. Season the chicken breast with salt, pepper, and Italian seasoning, then add it to the skillet.
- Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from the skillet and let it rest for a few minutes before slicing it into strips.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Reduce the heat and stir in the grated Parmesan cheese until the sauce is smooth and creamy.
- Add the zoodles to the skillet, tossing them in the Alfredo sauce for about 2-3 minutes until they are slightly softened.
- Return the sliced chicken to the skillet, mixing well to combine everything. Cook for an additional 1-2 minutes to heat through.
- Serve immediately, garnished with fresh parsley.
