Ingredients

  • Zucchini - 2 medium
  • Chicken breast - 250 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Heavy cream - 120 ml
  • Parmesan cheese - 50 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Italian seasoning - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles. Set aside.
  2. In a skillet, heat the olive oil over medium heat. Season the chicken breast with salt, pepper, and Italian seasoning, then add it to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from the skillet and let it rest for a few minutes before slicing it into strips.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the heavy cream and bring to a simmer. Reduce the heat and stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  6. Add the zoodles to the skillet, tossing them in the Alfredo sauce for about 2-3 minutes until they are slightly softened.
  7. Return the sliced chicken to the skillet, mixing well to combine everything. Cook for an additional 1-2 minutes to heat through.
  8. Serve immediately, garnished with fresh parsley.
