- Gluten-free fettuccine - 150g
- Chicken breast - 200g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Heavy cream - 150ml
- Parmesan cheese - 50g, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish, chopped
Steps
- Bring a large pot of salted water to a boil. Add gluten-free fettuccine and cook according to package instructions until al dente. Drain and set aside.
- While the pasta cooks, season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat and add the chicken. Cook for 5-7 minutes on each side until golden and cooked through. Remove from skillet and let rest for a few minutes before slicing.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer.
- Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with additional salt and pepper to taste.
