  • Gluten-free fettuccine - 150g
  • Chicken breast - 200g
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 150ml
  • Parmesan cheese - 50g, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish, chopped

Steps

  1. Bring a large pot of salted water to a boil. Add gluten-free fettuccine and cook according to package instructions until al dente. Drain and set aside.
  2. While the pasta cooks, season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat and add the chicken. Cook for 5-7 minutes on each side until golden and cooked through. Remove from skillet and let rest for a few minutes before slicing.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer.
  4. Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with additional salt and pepper to taste.
