Ingredients

  • Chicken thighs - 400 grams
  • Soy sauce (kosher) - 60 ml
  • White vinegar - 60 ml
  • Garlic, minced - 4 cloves
  • Bay leaves - 2 leaves
  • Black peppercorns - 1 teaspoon
  • Onion, sliced - 1 medium
  • Olive oil - 1 tablespoon
  • Water - 120 ml
  • Sugar - 1 teaspoon
  • Salt - to taste

Steps

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the sliced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Add the chicken thighs to the pot and brown on all sides, about 5-7 minutes.
  5. Pour in the soy sauce, white vinegar, water, and sugar. Stir to combine.
  6. Add the bay leaves and black peppercorns, then bring the mixture to a boil.
  7. Reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes until the chicken is tender.
  8. Taste and adjust seasoning with salt as needed.
