Ingredients

  • Sweet potatoes - 300 grams
  • Almond flour - 100 grams
  • Coconut flour - 25 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100 grams (sugar-free)
  • Fresh spinach - 50 grams
  • Red bell pepper - 1/2, sliced
  • Red onion - 1/4, thinly sliced
  • Dried oregano - 1 teaspoon
  • Fresh basil - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potatoes into small cubes. Boil them in a pot of salted water for about 10 minutes until tender, then drain and mash until smooth.
  3. In a mixing bowl, combine the mashed sweet potatoes, almond flour, coconut flour, egg, olive oil, garlic powder, salt, and black pepper. Mix until a dough forms.
  4. Line a baking sheet with parchment paper. Spread the sweet potato dough into a round pizza shape about 1/2 inch thick on the parchment.
  5. Bake the crust in the preheated oven for 20 minutes or until golden brown.
  6. While the crust is baking, prepare the toppings. In a bowl, mix the tomato sauce with dried oregano and set aside.
  7. Once the crust is done, remove it from the oven and spread the tomato sauce evenly on top.
  8. Top with spinach, sliced red bell pepper, and red onion. Sprinkle fresh basil over the top.
