Ingredients

  • Fresh cherries - 300 grams, pitted
  • Granulated sugar - 100 grams
  • Cornstarch - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Ground cinnamon - 1/4 teaspoon
  • Salt - a pinch
  • Pie crust (store-bought or homemade) - 1 (9-inch) crust
  • Butter - 1 tablespoon, cut into small pieces

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, ground cinnamon, and a pinch of salt. Stir until the cherries are well coated.
  3. Roll out the pie crust and place it into a 9-inch pie dish, trimming the edges as necessary.
  4. Pour the cherry filling into the pie crust, spreading it evenly. Dot the filling with small pieces of butter.
  5. Cover the pie with a top crust or create a lattice design if desired. Seal the edges by crimping them with a fork or your fingers.
  6. Cut small slits in the top crust to allow steam to escape.
  7. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Remove from the oven and let cool for at least 10 minutes before slicing and serving.
