- Pork ribs - 1 kg
- Fresh cherries - 200 g, pitted
- Chipotle peppers in adobo sauce - 2 peppers, minced
- Brown sugar - 50 g
- Honey - 30 g
- Apple cider vinegar - 40 ml
- Garlic powder - 1 tsp
- Onion powder - 1 tsp
- Salt - 1 tsp
- Black pepper - 1/2 tsp
- Olive oil - 1 tbsp
Steps
- Preheat your oven to 150°C (300°F).
- In a saucepan, combine the fresh cherries, chipotle peppers, brown sugar, honey, apple cider vinegar, garlic powder, onion powder, salt, and black pepper.
- Cook over medium heat until the cherries have softened and the mixture has thickened, about 10-15 minutes. Blend until smooth and set aside.
- Rub the pork ribs with olive oil, then season with salt and black pepper.
- Place the ribs on a baking sheet lined with foil and cover tightly with another piece of foil.
- Bake in the preheated oven for 2 hours until the ribs are tender.
- Remove the ribs from the oven and increase the temperature to 200°C (400°F).
- Brush the cherry chipotle sauce generously over the ribs and return them to the oven, uncovered, for an additional 15-20 minutes, or until caramelized.
- Remove from the oven, let rest for 5 minutes, then slice and serve with any remaining sauce.
