Ingredients

  • Pork ribs - 1 kg
  • Fresh cherries - 200 g, pitted
  • Chipotle peppers in adobo sauce - 2 peppers, minced
  • Brown sugar - 50 g
  • Honey - 30 g
  • Apple cider vinegar - 40 ml
  • Garlic powder - 1 tsp
  • Onion powder - 1 tsp
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Olive oil - 1 tbsp

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a saucepan, combine the fresh cherries, chipotle peppers, brown sugar, honey, apple cider vinegar, garlic powder, onion powder, salt, and black pepper.
  3. Cook over medium heat until the cherries have softened and the mixture has thickened, about 10-15 minutes. Blend until smooth and set aside.
  4. Rub the pork ribs with olive oil, then season with salt and black pepper.
  5. Place the ribs on a baking sheet lined with foil and cover tightly with another piece of foil.
  6. Bake in the preheated oven for 2 hours until the ribs are tender.
  7. Remove the ribs from the oven and increase the temperature to 200°C (400°F).
  8. Brush the cherry chipotle sauce generously over the ribs and return them to the oven, uncovered, for an additional 15-20 minutes, or until caramelized.
  9. Remove from the oven, let rest for 5 minutes, then slice and serve with any remaining sauce.
