Steps
- In a medium saucepan over medium heat, combine the pitted cherries, sugar, and vanilla extract. Stir gently until the sugar dissolves and the cherries begin to release their juices, about 5 minutes.
- Add the butter to the saucepan and continue to cook for another 3-4 minutes, allowing the mixture to thicken slightly.
- Carefully add the Kirsch to the pan and allow it to warm for about 1 minute. Using a long lighter or a match, ignite the alcohol to flambé the cherries, shaking the pan gently until the flames subside, which should take about 30 seconds.
- Remove the pan from heat and let the mixture cool slightly before serving.
