Ingredients

  • Fresh cherries - 250 grams, pitted
  • Granulated sugar - 50 grams
  • Vanilla extract - 1 teaspoon
  • Kirsch (cherry brandy) - 30 ml
  • Unsalted butter - 1 tablespoon
  • Vanilla ice cream - 2 scoops

Steps

  1. In a medium saucepan over medium heat, combine the pitted cherries, sugar, and vanilla extract. Stir gently until the sugar dissolves and the cherries begin to release their juices, about 5 minutes.
  2. Add the butter to the saucepan and continue to cook for another 3-4 minutes, allowing the mixture to thicken slightly.
  3. Carefully add the Kirsch to the pan and allow it to warm for about 1 minute. Using a long lighter or a match, ignite the alcohol to flambé the cherries, shaking the pan gently until the flames subside, which should take about 30 seconds.
  4. Remove the pan from heat and let the mixture cool slightly before serving.
  5. Scoop the vanilla ice cream into two serving bowls and spoon the warm cherry sauce over the ice cream. Serve immediately.
