- Cauliflower rice - 300 grams
- Chicken or vegetable broth - 500 ml
- Heavy cream - 100 ml
- Parmesan cheese, grated - 50 grams
- Mozzarella cheese, shredded - 50 grams
- Butter - 30 grams
- Garlic, minced - 2 cloves
- Onion, finely chopped - 1 small
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 1 tablespoon
Steps
- In a large skillet, heat the olive oil and butter over medium heat until melted.
- Add the chopped onion and minced garlic to the skillet, sautéing until soft and translucent, about 3-4 minutes.
- Stir in the cauliflower rice, cooking for another 3-5 minutes until slightly tender.
- Pour in the broth and bring the mixture to a simmer, reducing heat to low and allowing it to cook for about 10 minutes, stirring occasionally.
- Once the cauliflower is tender and most of the broth has been absorbed, stir in the heavy cream, Parmesan cheese, and mozzarella cheese until melted and creamy.
- Season with salt and black pepper to taste, and continue to cook for another 2-3 minutes.
- Remove from heat and garnish with fresh parsley before serving.
