Ingredients

  • Cauliflower rice - 300 grams
  • Chicken or vegetable broth - 500 ml
  • Heavy cream - 100 ml
  • Parmesan cheese, grated - 50 grams
  • Mozzarella cheese, shredded - 50 grams
  • Butter - 30 grams
  • Garlic, minced - 2 cloves
  • Onion, finely chopped - 1 small
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 1 tablespoon

Steps

  1. In a large skillet, heat the olive oil and butter over medium heat until melted.
  2. Add the chopped onion and minced garlic to the skillet, sautéing until soft and translucent, about 3-4 minutes.
  3. Stir in the cauliflower rice, cooking for another 3-5 minutes until slightly tender.
  4. Pour in the broth and bring the mixture to a simmer, reducing heat to low and allowing it to cook for about 10 minutes, stirring occasionally.
  5. Once the cauliflower is tender and most of the broth has been absorbed, stir in the heavy cream, Parmesan cheese, and mozzarella cheese until melted and creamy.
  6. Season with salt and black pepper to taste, and continue to cook for another 2-3 minutes.
  7. Remove from heat and garnish with fresh parsley before serving.
