Ingredients

  • Cauliflower - 300 grams (about 1 medium head)
  • Mozzarella cheese (shredded) - 150 grams
  • Parmesan cheese (grated) - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100 grams
  • Bell pepper (sliced) - 50 grams
  • Mushrooms (sliced) - 50 grams
  • Olive oil - 1 tablespoon
  • Fresh basil (for garnish) - a few leaves

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Remove the leaves and stem from the cauliflower and cut it into florets.
  3. In a food processor, pulse the cauliflower florets until they resemble rice grains.
  4. Transfer the processed cauliflower to a microwave-safe bowl and microwave on high for about 5 minutes to soften.
  5. Let the cauliflower cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible.
  6. In a mixing bowl, combine the cauliflower, 100g mozzarella cheese, parmesan cheese, egg, garlic powder, onion powder, oregano, salt, and black pepper. Mix until well combined.
  7. Line a baking tray with parchment paper and spread the cauliflower mixture into a circular shape, about 1/2 inch thick.
  8. Bake the crust in the preheated oven for about 15-20 minutes or until golden brown and firm.
  9. Remove the crust from the oven and spread the tomato sauce evenly over the top.
  10. Top with the remaining mozzarella cheese, sliced bell pepper, and mushrooms.
  11. Return the pizza to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
