  • Cheddar cheese, shredded - 50 grams
  • Parmesan cheese, grated - 30 grams
  • Almond flour - 30 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large pot, bring water to a boil and add the cauliflower florets. Blanch for 3-4 minutes until slightly tender, then drain and let cool.

  4. In a large mixing bowl, combine the drained cauliflower, cheddar cheese, Parmesan cheese, almond flour, garlic powder, onion powder, salt, and black pepper.
  5. In a small bowl, beat the egg and then add it to the cauliflower mixture. Mix until everything is well combined.
  6. Form the mixture into bite-sized balls or patties and place them on the prepared baking sheet.
  7. Drizzle olive oil over the bites and bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving.
