Ingredients

  • Broccoli florets - 200 grams
  • Vegetable broth - 500 ml
  • Cream cheese - 100 grams
  • Cheddar cheese, shredded - 100 grams
  • Garlic, minced - 2 cloves
  • Onion, chopped - 1 small
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Optional: Red pepper flakes - 1/4 teaspoon

Steps

  1. In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
  2. Add the broccoli florets to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes or until the broccoli is tender.
  3. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender.
  4. Stir in the cream cheese until melted and well incorporated.
  5. Add the shredded cheddar cheese and stir until melted and creamy. Season with salt, black pepper, and optional red pepper flakes to taste.
  6. Serve hot, garnished with additional cheddar cheese if desired.
