- Broccoli florets - 200 grams
- Vegetable broth - 500 ml
- Cream cheese - 100 grams
- Cheddar cheese, shredded - 100 grams
- Garlic, minced - 2 cloves
- Onion, chopped - 1 small
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Optional: Red pepper flakes - 1/4 teaspoon
Steps
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
- Add the broccoli florets to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes or until the broccoli is tender.
- Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender.
- Stir in the cream cheese until melted and well incorporated.
- Add the shredded cheddar cheese and stir until melted and creamy. Season with salt, black pepper, and optional red pepper flakes to taste.
- Serve hot, garnished with additional cheddar cheese if desired.
