Ingredients

  • Broccoli florets - 200 grams
  • Cheddar cheese, shredded - 1 cup
  • Cream cheese - 50 grams
  • Garlic, minced - 2 cloves
  • Butter - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Parmesan cheese, grated - 2 tablespoons

Steps

  1. In a medium saucepan, heat the vegetable broth over medium heat until it simmers.
  2. Add the long-grain rice and a pinch of salt to the simmering broth. Cover and reduce heat to low, cooking for about 18 minutes or until the rice is tender and liquid is absorbed.
  3. While the rice is cooking, bring a small pot of water to a boil. Blanch the broccoli florets for about 3 minutes until bright green and tender-crisp. Drain and set aside.
  4. In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  6. Stir in the blanched broccoli, shredded cheddar cheese, paprika, black pepper, and remaining salt. Cook for an additional 2-3 minutes until the cheese is melted and everything is heated through.
