- Broccoli florets - 200 grams
- Cheddar cheese, shredded - 1 cup
- Cream cheese - 50 grams
- Garlic, minced - 2 cloves
- Butter - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Parmesan cheese, grated - 2 tablespoons
Steps
- In a medium saucepan, heat the vegetable broth over medium heat until it simmers.
- Add the long-grain rice and a pinch of salt to the simmering broth. Cover and reduce heat to low, cooking for about 18 minutes or until the rice is tender and liquid is absorbed.
- While the rice is cooking, bring a small pot of water to a boil. Blanch the broccoli florets for about 3 minutes until bright green and tender-crisp. Drain and set aside.
