Ingredients
- Corn tortillas - 4 pieces
- Shredded mozzarella cheese - 100 grams
- Shredded cheddar cheese - 100 grams
- Olive oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Jalapeño - 1, sliced (optional)
- Sour cream - for serving
- Salsa - for serving
Steps
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Place 2 corn tortillas in the skillet and sprinkle 50 grams of mozzarella and 50 grams of cheddar cheese on each tortilla.
- Add chopped cilantro and jalapeño slices on top of the cheese.
- Top each with another tortilla and press down gently.
- Cook for about 2-3 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
- Carefully flip the quesadillas and add the remaining tablespoon of olive oil to the skillet.
- Cook for another 2-3 minutes until the other side is golden brown and crispy.
- Remove from the skillet and let cool for a minute before cutting into wedges.
- Serve with sour cream and salsa on the side.
