Ingredients

  • Corn tortillas - 4 pieces
  • Shredded mozzarella cheese - 100 grams
  • Shredded cheddar cheese - 100 grams
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Jalapeño - 1, sliced (optional)
  • Sour cream - for serving
  • Salsa - for serving

Steps

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  2. Place 2 corn tortillas in the skillet and sprinkle 50 grams of mozzarella and 50 grams of cheddar cheese on each tortilla.
  3. Add chopped cilantro and jalapeño slices on top of the cheese.
  4. Top each with another tortilla and press down gently.
  5. Cook for about 2-3 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
  6. Carefully flip the quesadillas and add the remaining tablespoon of olive oil to the skillet.
  7. Cook for another 2-3 minutes until the other side is golden brown and crispy.
  8. Remove from the skillet and let cool for a minute before cutting into wedges.
  9. Serve with sour cream and salsa on the side.
