Ingredients

  • Flour Tortillas - 2 large (10-inch)
  • Shredded Cheddar Cheese - 1 cup (100g)
  • Shredded Monterey Jack Cheese - 1 cup (100g)
  • Olive Oil - 2 tablespoons
  • Ground Cumin - 1/2 teaspoon
  • Smoked Paprika - 1/2 teaspoon
  • Fresh Cilantro (chopped) - 2 tablespoons
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. In a mixing bowl, combine the shredded cheddar cheese, Monterey Jack cheese, ground cumin, smoked paprika, chopped cilantro, salt, and black pepper. Mix well.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle half of the cheese mixture evenly over the tortilla.
  4. Top with the second tortilla and cook for about 3-4 minutes until the bottom is golden brown and the cheese begins to melt.
  5. Carefully flip the quesadilla using a spatula, adding the remaining tablespoon of olive oil if necessary, and cook for another 3-4 minutes until the other side is golden brown and the cheese is fully melted.
  6. Remove from the skillet and let it cool for a minute before cutting into wedges.
  7. Serve warm with salsa or guacamole on the side.
