- Shredded Cheddar Cheese - 1 cup (100g)
- Shredded Monterey Jack Cheese - 1 cup (100g)
- Olive Oil - 2 tablespoons
- Ground Cumin - 1/2 teaspoon
- Smoked Paprika - 1/2 teaspoon
- Fresh Cilantro (chopped) - 2 tablespoons
- Salt - to taste
- Black Pepper - to taste
Steps
- In a mixing bowl, combine the shredded cheddar cheese, Monterey Jack cheese, ground cumin, smoked paprika, chopped cilantro, salt, and black pepper. Mix well.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese mixture evenly over the tortilla.
- Top with the second tortilla and cook for about 3-4 minutes until the bottom is golden brown and the cheese begins to melt.
- Carefully flip the quesadilla using a spatula, adding the remaining tablespoon of olive oil if necessary, and cook for another 3-4 minutes until the other side is golden brown and the cheese is fully melted.
- Remove from the skillet and let it cool for a minute before cutting into wedges.
- Serve warm with salsa or guacamole on the side.
