  • Sharp cheddar cheese - 1/2 cup (60 grams), shredded
  • Cream cheese - 2 tablespoons (30 grams)
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chives - 1 tablespoon, chopped (for garnish)

Steps

  1. Start by ricing the cauliflower using a food processor or box grater until it resembles the texture of grits.
  2. In a medium saucepan, bring 1 cup of water to a boil and add the riced cauliflower.
  3. Reduce the heat to medium-low and cover, cooking for about 5-7 minutes until the cauliflower is tender.
  4. Drain any excess water and return the cauliflower to the saucepan.
