Cheese Blintzes

Ingredients
- All-purpose flour - 1 cup (120g)
- Milk - 1 cup (240ml)
- Eggs - 2 large
- Salt - 1/4 teaspoon
- Butter - 2 tablespoons (30g), melted
- Ricotta cheese - 1/2 cup (120g)
- Cream cheese - 1/4 cup (60g), softened
- Sugar - 2 tablespoons (25g)
- Vanilla extract - 1 teaspoon
- Powdered sugar - for dusting
- Fruit compote - for serving (optional)
Steps
- In a mixing bowl, whisk together flour, milk, eggs, and salt until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a little melted butter. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.
- Cook for about 1-2 minutes until the edges lift, then flip and cook for another 1 minute. Repeat with remaining batter, stacking the blintzes on a plate.
- In another bowl, combine ricotta cheese, cream cheese, sugar, and vanilla extract until well blended.
- Lay a blintz on a flat surface, spoon about 2 tablespoons of the cheese mixture onto the center, and fold the sides over the filling, then roll it up tightly.
- Repeat with remaining blintzes. You can place them seam side down on a baking dish.
- In the same skillet, add a bit more butter and cook the blintzes seam side down for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes.
- Serve warm, dusted with powdered sugar and with fruit compote on the side if desired.
