Ingredients

  • All-purpose flour - 1 cup (120g)
  • Milk - 1 cup (240ml)
  • Eggs - 2 large
  • Salt - 1/4 teaspoon
  • Butter - 2 tablespoons (30g), melted
  • Ricotta cheese - 1/2 cup (120g)
  • Cream cheese - 1/4 cup (60g), softened
  • Sugar - 2 tablespoons (25g)
  • Vanilla extract - 1 teaspoon
  • Powdered sugar - for dusting
  • Fruit compote - for serving (optional)

Steps

  1. In a mixing bowl, whisk together flour, milk, eggs, and salt until smooth. Let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a little melted butter. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.
  3. Cook for about 1-2 minutes until the edges lift, then flip and cook for another 1 minute. Repeat with remaining batter, stacking the blintzes on a plate.
  4. In another bowl, combine ricotta cheese, cream cheese, sugar, and vanilla extract until well blended.
  5. Lay a blintz on a flat surface, spoon about 2 tablespoons of the cheese mixture onto the center, and fold the sides over the filling, then roll it up tightly.
  6. Repeat with remaining blintzes. You can place them seam side down on a baking dish.
  7. In the same skillet, add a bit more butter and cook the blintzes seam side down for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes.
  8. Serve warm, dusted with powdered sugar and with fruit compote on the side if desired.
