Ingredients

  • Cauliflower - 400 grams, chopped
  • Cheddar cheese - 100 grams, shredded
  • Heavy cream - 120 ml
  • Vegetable broth - 500 ml
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chives - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat and add the diced onion. Sauté for about 5 minutes until translucent.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the chopped cauliflower and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the cauliflower is tender.
  4. Using an immersion blender, blend the soup until smooth. If you don't have one, carefully transfer the soup to a blender in batches.
