Ingredients

  • Alligator tail - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine olive oil, garlic powder, smoked paprika, cayenne pepper, salt, black pepper, and lemon juice to create a marinade.
  2. Cut the alligator tail into 2.5 cm thick medallions and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Remove the alligator from the marinade, allowing excess marinade to drip off.
  5. Place the alligator medallions on the grill and cook for about 4-5 minutes per side, or until they develop a nice char and reach an internal temperature of 70°C.
  6. Once cooked, remove from the grill and let rest for 5 minutes.
  7. Garnish with chopped fresh parsley before serving.
