- Acorn squash - 1 medium (about 500g)
- Olive oil - 2 tablespoons
- Maple syrup - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh rosemary - 1 teaspoon (chopped)
Steps
- Preheat your grill or BBQ to medium-high heat (about 200°C or 400°F).
- Cut the acorn squash in half lengthwise and scoop out the seeds.
- In a small bowl, mix together the olive oil, maple syrup, smoked paprika, garlic powder, salt, black pepper, and chopped rosemary.
- Brush the inside of the acorn squash halves with the olive oil mixture generously.
- Place the squash cut-side down on the grill and cook for about 15-20 minutes or until charred and tender.
- Flip the squash over and cook for an additional 5-10 minutes until the flesh is soft.
- Remove from the grill and let cool slightly before serving.
