Ingredients

  • Acorn squash - 1 medium (about 500g)
  • Olive oil - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh rosemary - 1 teaspoon (chopped)

Steps

  1. Preheat your grill or BBQ to medium-high heat (about 200°C or 400°F).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds.
  3. In a small bowl, mix together the olive oil, maple syrup, smoked paprika, garlic powder, salt, black pepper, and chopped rosemary.
  4. Brush the inside of the acorn squash halves with the olive oil mixture generously.
  5. Place the squash cut-side down on the grill and cook for about 15-20 minutes or until charred and tender.
  6. Flip the squash over and cook for an additional 5-10 minutes until the flesh is soft.
  7. Remove from the grill and let cool slightly before serving.
