- all-purpose flour - 120 grams
- unsalted butter - 50 grams, softened
- granulated sugar - 50 grams
- brown sugar - 30 grams
- egg - 1 large
- baking soda - 1/2 teaspoon
- ground cinnamon - 1 teaspoon
- ground ginger - 1/2 teaspoon
- ground cardamom - 1/2 teaspoon
- ground cloves - 1/4 teaspoon
- vanilla extract - 1/2 teaspoon
- salt - 1/4 teaspoon
- chopped walnuts - 30 grams (optional)
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, and mix until well combined.
- In another bowl, whisk together the all-purpose flour, baking soda, salt, and all the spices (cinnamon, ginger, cardamom, cloves).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in the chopped walnuts.
- Scoop tablespoons of the dough onto the prepared baking sheet, spacing them about 5 cm apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
