Ingredients
- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 small
- Avocado - 1 medium
- Fresh lime juice - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Red cabbage - 100 grams, shredded
- Radishes - 4, thinly sliced
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into small florets and place them in a mixing bowl.
- Drizzle the olive oil over the cauliflower, then sprinkle with cumin, paprika, garlic powder, salt, and pepper. Toss to coat evenly.
- Spread the seasoned cauliflower on a baking sheet and roast in the preheated oven for 20 minutes, or until golden and tender, tossing halfway through.
- While the cauliflower is roasting, prepare the avocado crema. In a small bowl, mash the avocado and mix in the lime juice and chopped cilantro until smooth. Season with salt to taste.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
- Once the cauliflower is done, assemble the tacos by placing a generous amount of roasted cauliflower in each tortilla.
- Top with shredded red cabbage, sliced radishes, and a dollop of avocado crema.
