Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Avocado - 1 medium
  • Fresh lime juice - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Red cabbage - 100 grams, shredded
  • Radishes - 4, thinly sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them in a mixing bowl.
  3. Drizzle the olive oil over the cauliflower, then sprinkle with cumin, paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  4. Spread the seasoned cauliflower on a baking sheet and roast in the preheated oven for 20 minutes, or until golden and tender, tossing halfway through.
  5. While the cauliflower is roasting, prepare the avocado crema. In a small bowl, mash the avocado and mix in the lime juice and chopped cilantro until smooth. Season with salt to taste.
  6. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
  7. Once the cauliflower is done, assemble the tacos by placing a generous amount of roasted cauliflower in each tortilla.
  8. Top with shredded red cabbage, sliced radishes, and a dollop of avocado crema.
