Ingredients

  • Cauliflower - 1 small head (about 300g)
  • Fresh parsley - 1 cup, finely chopped
  • Fresh mint - 1/4 cup, finely chopped
  • Cherry tomatoes - 1 cup, diced
  • Cucumber - 1/2 medium, diced
  • Green onion - 2 stalks, thinly sliced
  • Lemon juice - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. Remove the leaves from the cauliflower and cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they are finely grated and resemble couscous. Be careful not to over-process.
  3. Transfer the grated cauliflower to a large mixing bowl.
  4. Add the chopped parsley, mint, diced cherry tomatoes, diced cucumber, and sliced green onion to the bowl.
