Ingredients
- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon
- Fresh parsley - 2 tablespoons (chopped, for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Remove the leaves from the cauliflower head and trim the stem, then slice the cauliflower into 1.5 cm thick steaks.
- In a small bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Brush both sides of the cauliflower steaks with the olive oil mixture and place them on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20 minutes, flipping halfway through, until the steaks are golden brown and tender.
- While the cauliflower is roasting, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
- Once the cauliflower is done, remove it from the oven and drizzle with the tahini sauce.
- Garnish with chopped fresh parsley before serving.
