- Cauliflower - 1 medium head (about 600g)
- Bell pepper (red or yellow) - 1 medium, diced
- Carrot - 1 medium, julienned
- Green peas - 100g (fresh or frozen)
- Green onions - 2, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Egg - 1, beaten
- Salt - to taste
- Pepper - to taste
Steps
- Remove the leaves and stem from the cauliflower and cut it into florets. Pulse the florets in a food processor until they resemble rice grains. Set aside.
- In a large non-stick skillet or wok, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the diced bell pepper, julienned carrot, and green peas to the skillet. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.
- Push the vegetables to one side of the skillet and add the beaten egg to the other side. Scramble the egg until fully cooked, then mix it in with the vegetables.
- Add the cauliflower rice to the skillet, followed by the soy sauce and sesame oil. Stir well to combine everything and cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Season with salt and pepper to taste and sprinkle sliced green onions on top before serving.
