- Black beans - 1 cup, drained and rinsed

- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1, sliced
Steps
- Remove leaves and stem from the cauliflower, then cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble grains of rice. Set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add diced bell pepper, carrot, and zucchini to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
- Stir in the cauliflower rice, black beans, corn, halved cherry tomatoes, salt, and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Remove from heat and stir in chopped cilantro and lime juice.
