Ingredients

  • Cauliflower - 1 medium head

  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 1 cup, halved
  • Black beans - 1 cup, drained and rinsed
  • Corn - 1/2 cup, frozen or fresh
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1, sliced

Steps

  1. Remove leaves and stem from the cauliflower, then cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble grains of rice. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add diced bell pepper, carrot, and zucchini to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
  5. Stir in the cauliflower rice, black beans, corn, halved cherry tomatoes, salt, and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  6. Remove from heat and stir in chopped cilantro and lime juice.
  7. Serve the cauliflower rice mixture in bowls, topped with sliced avocado.
