Ingredients

  • Cauliflower - 300 grams, riced
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pizza sauce - 60 grams
  • Pepperoni slices - 20 grams, chopped (optional)
  • Fresh basil - a few leaves, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the riced cauliflower, shredded mozzarella cheese, grated Parmesan cheese, egg, dried oregano, garlic powder, salt, and black pepper. Mix well until fully combined.
  3. Using your hands, form the mixture into small bite-sized rounds or patties and place them on the prepared baking sheet.
  4. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy on the outside.
  5. Remove from the oven and let cool for a few minutes. Top each bite with a small spoonful of pizza sauce and sprinkle with chopped pepperoni, if using.
  6. Return to the oven for an additional 5 minutes to warm the toppings.
