Ingredients

  • Cauliflower - 300 grams
  • Cream cheese - 100 grams
  • Cheddar cheese, shredded - 100 grams
  • Parmesan cheese, grated - 30 grams
  • Unsweetened almond milk - 100 ml
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Paprika - 1/2 teaspoon (optional for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the cauliflower into small florets and steam them for about 5-7 minutes until tender.
  3. In a medium saucepan over low heat, combine cream cheese, almond milk, garlic powder, onion powder, salt, and black pepper. Stir until smooth and creamy.
  4. Add the shredded cheddar cheese and grated Parmesan cheese to the saucepan, continuing to stir until fully melted and combined.
  5. Once the cauliflower is steamed, drain any excess water and add it to the cheese sauce. Gently mix until the cauliflower is coated with the cheese sauce.
  6. Transfer the mixture to a baking dish, spreading it evenly. Sprinkle additional cheddar cheese on top if desired.
  7. Bake in the preheated oven for 15-20 minutes or until the top is golden and bubbly.
  8. Remove from the oven and let it cool for a couple of minutes. Garnish with paprika if desired before serving.
