Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Shredded cheese (cheddar or mozzarella) - 50 grams
  • Almond flour - 30 grams
  • Green onion (finely chopped) - 2 tablespoons
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Remove the leaves and stem from the cauliflower, then cut it into florets.
  3. In a food processor, pulse the cauliflower florets until they resemble rice or small grains.
  4. Transfer the riced cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a mixing bowl, combine the riced cauliflower, egg, shredded cheese, almond flour, green onion, garlic powder, salt, and black pepper until well mixed.
  6. Form the mixture into 4 equal-sized patties and place them on the prepared baking sheet.
  7. Drizzle the patties with olive oil and gently press them down to flatten slightly.
  8. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
